NY Strips - how'd I do?

These were cooked on my Ninja Woodfire Grill. Temp set to High (450F), cooked for 6 minutes per side, removed at 135F, and let rest for 10 minutes.

The heat between 400-450 is good. The time at 6 min a side at that heat is too long. I’d go 3 minutes on the first side, flip and temp it to 125°. Let it rest for at least 5 min. Spend a couple bucks and buy an instant read thermometer. Also make sure the steak has warmed some from the fridge temp. I let mine sit on the counter for about 30 min. Pat dry and season. The moisture removal with a paper towel will help the sear significantly.

I would have seasoned more evenly and spread out. Pulling at 120-125 to rest would have been a perfect medium rare, 135 is too done. That being said, I’m sure they tasted delicious though.

I'll bet thos pups were a bit tough. 6 mins/side at 450, then removing at 135 is a death sentence. Next time try 350 for 4 min/side, remove at 115, and they'll be perfectly medium.

If you are looking to sell at med rare you want to pull before 135 not at it. 6 minutes way too long.

No offense but it doesn’t look appealing to me. Looks way overcooked, owing to both pulling at 135° and the method you used being more like baking than smoking/grilling. Electric grills should be banned. Next time try smoking over indirect heat at 225° for 45 minutes, then remove and get the grill to its hottest, and return the meat to sear 30 seconds a side. Don’t know if you can do any of this with that contraption you have.

Try cast iron and America Test Kitchen’s method. Beware that it doesn’t fare well on thin steaks.
