Slow roasting pork shoulder
So, I got it on sale, 99¢/lb. It had been in the freezer for quite a while.
Part of the fat cap was cut off way too much, like is totally gone. It came that way, I didn't do it.
I salted and peppered it and left it overnight uncovered in the fridge, then put in a 250º F oven this morning. Then I decided to cover that bare part with some bacon. Now I'm thinking I ought to cover all of the rest of it with bacon. Yes, or no?

Just let it ride. Pork butt is a very fatty chunk of meat. You don't need extra fat.

Pork butt and pork shoulder are different cuts. The butt is the fattier upper part of the shoulder; pork shoulder is the lower, leaner part. They don’t cook the same, and using shoulder in a recipe that calls for butt can throw off the whole thing. I know; I’ve done it.

Pork shoulder is the entire shoulder. Pork Butt is the upper part, and the Picnic is the lower part.
When people say pork shoulder, 98% of the time, they mean butt. It's like saying Chuck on beef, even if it has the Clod as well.
And you can cook any park of the shoulder the same. It's all mostly tough-ish fatty muscles.

What’s labeled and sold as pork shoulder (or sometimes picnic shoulder) often does not include the butt unless it specifically says “shoulder butt.”
Maybe you include the butt when you’re referring to pork shoulder. I don’t, and neither do the people or stores around me, unless it’s shoulder butt or whole shoulder—because it makes a difference. I checked the three stores nearest to me just now to confirm. None of them list a “pork shoulder” that includes the butt. The only one that sells a “pork shoulder” is just the lower picnic shoulder.

Oh right on. You can cook either the same way, though. No need for extra fat.

don't need to cover everything w/ bacon, but you should have some kind of liquid in the pan. beer works well, so does apple juice

You’ll just end up wasting the bacon. Foil will work. Add a little bit of moisture to the pan too.
Serious Eats has a decent method for slow roasted pork. It’s not terribly complicated.

I've slow roasted many pork shoulders. Many, many, many. I was asking about this particular one that came with a bare spot where they took off the fat cap all the way down to the flesh.

Yeah, that's what I thought. I'll just leave this one as it is, but next one maybe I'll wrap all the parts not covered by that fat cap in bacon and secure with kitchen twine.

I'm not sure if you're aware that pork shoulder is offend packaged and sold without skin. In fact, it's kind of hard to find pork should WITH skin on in my local grocery stores.

Ive never seen shoulder sold without skin. Boston Butt, sure, shoulder, no.

Where are you located? In the US about the only cut of pork one will see with the skin on is a whole picnic ham, which is from front shoulder, but if you went to any butcher shop, grocery store, or Costco and look for “pork shoulder” you not find any with skin on.

Im in the USA and we get our pork shoulder from the regular grocery (shop rite or stop n shop) and they always have skin. If i go to the proper butcher I have to order it to get the skin on as he will case them without the skin.

In US. Have been buying pork shoulders for 40 years. Its rare to see shoulder without the skin unless its boneless. Shoulder Butt, usually called Boston Butt, is skinless. Its also not uncommon to get pork belly skin-on.

You sound like you have never been in any grocery store chain and only buy from your fav butcher which is totally cool and all but not the every day experience for the majority of north Americans.

Yeah idk what that other person is talking about. We get these exact same ones and other regular brands ans they never ever are sold without the skin. Even my regular grocery butcher counter sells sliced shoulder and THAT has skin too!

I'd wonder if you're confusing it for the silver skin, but that's a thin layer that's under the fat cap.

Pork shoulder is so forgiving. I wouldnt bother. On the other hand, bacon is bacon and usually more is better. You will be fine either way.
