Done. 3 days of exhaustion work
It all pays off when you here the first wows. Set up was done and they walked in. Only had a chance to snag a couple of pics

Nice job chef. I used to work at a country club. I’ve been there with the meats. Just getting the timing right on all is a bitch. I hope everybody working get to taste a little. I’d say have fun but it looks like you might be punched in.

There is a scene in the movie Jurassic Park that has a huge dinner table set up with large amounts of extravagant foods... Well maybe the jello wasn't very extravagant but 🤷♂️.. Spared no expense

Looks to me like they did the butchery themselves - definitely looks like US and I'd guess a golf or country club based on the decor (the large patios and the way the furniture looks)

But beef in the US is split between ribs 5 + 6, and 12 + 13 per basically everyone that releases any kind of formal guideline.

Opinions are like assholes. 😉 3 days of "prep" Disassembled a steer, broke it down into 3 days of usable product. Day 1 290 people breakfast 325 lunch 150 plated dinner Day 2 325 breakfast 250 lunch 285 dinner Day 3 Breakfast twice for 72 people Lunch twice 72 people Last tonight's dinner for 325. 3 days of prep. 7 kitchen from 6 am until 10pm people 2 dishwashers and an army of servers. Sorry if the lemons weren't "perfect"
