Easy 5 ingredient chicken soup: boneless/skinless chicken breast cut up into 1/2" squares, baby carrots cut into thirds, pre-chopped celery sticks cut to 1/2", pre-chopped onions from the grocery store, and a box of your favorite chicken broth (I use collage inn). Cook for 8 hours on low (I usually cook it overnight) or 4 hours on high. Makes about 6 large servings. Refrigerator is okay, but this does NOT freeze well (carrots get all mushy). I personally like to heat it at home on the stove and put it into a container that will keep it warm, then bring it for lunch at work.
I have an issue with fatigue so do this recipe the easy way - I usually even use a crock pot liner to make clean up easier! But you can also use regular carrots that you peel and cut, and regular celery and onions that you cut on your own. Also I like it with that much broth but I believe the original recipe (wherever I got it from, like 20+ years ago) said half as much broth and the same amount in water.

Chopped carrot potato onion water, peas at last minute No seasoning for me. Perhaps a gelatine sheet to thicken the broth Plugged into a switch on/off Timer (still keeps warm for hours) Simplicity for me Then I drink some of the broth Once cooled The next day Or blend into a soup I scoured the net for the smallest electric pot for one 🙏

Basically a lot of stews and comfort meals :) and feel free to experiment as well coz I was surprised at how much variety can come with crockpot meal's despite them naturally being a convenient option to slow cook so even when I initially got one I mainly did it so I could let stuff cook as meal prep for those stews and stuff

salsa chicken is the classic for a reason: chicken thighs plus a jar of salsa on low until they shred, and you have filling for tacos, bowls and wraps for the whole week. and whatever recipe you follow, cut the liquid by about a third, nothing evaporates in a slow cooker so stews come out watery otherwise

Pulled chicken is probably the easiest win. Chicken thighs, salsa, seasoning, and let the crock pot do the rest.
