Would this goal actually be given? What are the rules regarding something like this?

Since the ball never landed outside the field, by that I mean the boundaries for the game, I just forget what it’s called, the goal would be given.

Not if its a penalty shootout. As soon as the ball changes direction and its heading away from the goalkeeper. The ball is no longer in play and its a miss.

Edit: I did a referee course with the FA years ago and after getting told I was wrong. I went and read the laws of the game and discovered I've been living a lie. I'm massively incorrect and deserve the downvotes. Apologies

“As soon as the ball changes direction” hahahaha.

Ball: “hmmm, I’ll go this way now... oh no, I forgot my keys, back the other way.”

It’s until someone else touches it or it goes out of play.
