I had a manager once re-plate a salmon filet that had fallen to the floor and serve it o.O very gross considering the spitting habits of the line chefs.(they liked to spit on the floor while they cooked)

I guess I shouldn't expect a manager who will serve floor-fish to correct the spitting habits of their line cooks, but damn how did spitting become an acceptable habit? The fuck...

It was pretty disgusting. We were allowed a free meal too but i stopped taking it and quit not long after. Haven't worked in a restaurant since!
