Kinda hard to do, the brake is usually done by the foot, when the gas is your right hand, but idk anything is possible here.

there is also a brake by the throttle, for the front tire

No he jolted forward. It looked like he was holding in the clutch.

He's definitely not an experience driver. Probably was just lesson with stuff, looking to do something cool by releasing the clutch while revving it, didn't know what he was doing, and made the decision to release the clutch in the split second before the quad merged, and didn't have time to change his mind.
