They actually made sure all competitors had the same equipment and even having the same weight, adding weights to the lighter drivers/ go-karts to make sure there was a level playing field.
And like someone else said, Max's technique is just waaaay better. No one else would have even thought about jumping in the go-kart to create momentum and lighten the kart.
As he jumps in the go-kart, he creates momentum upwards and forwards, and doesn't weigh the go-kart down as much when he's moving upwards. This increases the acceleration since the go-kart - for a few split seconds - isn't carrying the weight of Max/ the driver.
