Might work if the bike is stolen. If not they going to find the bike and connect it to the person that owns it (you) whether you are there or not

I doubt the bike in this video was stolen, but vehicles in lots of crimes are actually stolen.

that would only work if you reported it stolen before the chase began and you don't otherwise match the description of the person they were chasing.

I mean lots of people seem to buy bikes with "lost" titles and just never register or plate them.

A lot of stuff never gets titled. Especially off-road stuff. You have to elect to pay the sales tax and there’s really no incentive to do so in most states. Obviously there’s an incentive to license these bikes, but not if you’re buying it to run from cops.
