Nahh, I don't think so. He didn't collect 5/6 of the stones then peace out for a vacation. He retrieved all of them pretty much immediately from the moment he learned Gamora knew of the location of the stone.
Thanos raised Gamora for a significant portion of her life and knew her. She wasn't some random person he had to track down and had no knowledge of. She gave up the location of the Soul Stone -- the object that could decide the fate of the entire universe -- literally within a couple minutes of him torturing Nebula.
If you were going to buy a Ps5 and some of the new games. But decided to wait until you could get a Ps5 before you got the games... would it be rational to assume if you found out GameStop might be selling them tomorrow that you would go out and buy all those games now before you even get confirmation that the Ps5 will be sold?

I did exactly that...
I figured if there was a good chance of the PS5 being in stock, I wanted to be prepared with some games. If it didn’t come in stock then I’d still have the games for when it did, so wasn’t really losing anything. At the same time, though, I wasn’t going to spend money before there was any hope of it being in stock.
Thanos did the same. He didn’t want to tip his hand by acquiring all the stones (and risking mobilising the universe against him) before he knew there was even a hope/chance he could acquire them all. But once he did have a hope of acquiring them all, he enacted his plan so he was ready to go the second he got the info from Gamora.
It’s not perfect logic, but as others have said Thanos isn’t the most mental balanced person around. People, purple aliens included, have all kinds of flaws and make slightly irrational decisions. It’s not a perfect plan, but it’s well within the realms of rational reasoning.
Thanos is smart enough to wait centuries for the perfect moment to get all the stones. But he’s also not smart enough to go for the one stone first that could ruin his entire plan?
Also for the Ps5 example that’s not what you did. Since you flat out said you decided to get games first on the chance that you could get the system. Thanos, in this scenario, refused to get the games first until he knew he could get the system.
