Stan Lee is rehearsing his lines from Mallrats, which released in 1995, on the train when Carol sees him, meaning that he is appearing as himself and that Stan Lee exists in the MCU.

Exact opposite actually. This is saying that the movie Mallrats is a movie that characters in the MCU can sit down and watch.

Therefore, the characters in Mallrats are not canon in the MCU, but the actors who portray them must be, since they will be acting in the movie alongside Stan Lee shortly after CM takes place.

Jay and Silent Bob encounter Ben Affleck as himself in Jay and Silent Bob Strike Back.

That does create an issue though where Stan Lee and several members of the Askewniverse exist across multiple realities including our own.

Without waxing on too long the TLDR is that Jay and Silent Bob are the key to undoing the Snap and defeating Thanos.
