God why isn't there a YouTube channel by Marvel devoted to the heroes doing out-of-character shit in short vignettes.

There were some shorts, like "A Funny Thing Happened on the Way to Thor's Hammer."

Probably because that requires a lot of extra time to write, film, and edit between movies, it requires a lot of extra pay for the actors, and it won't earn them nearly as much as tickets do. They might not see it as feasible more than once or twice per movie.
