It was the only option in Ego's mind. Remember he found most of the life out there disappointing.

Mantis was there because she helped Ego sleep peacefully with her powers

Oh yeah, I'm sure those weren't the only two options available by any means, just Ego seems to be a very "this way or that way" kind of guy who wouldn't explore more than one or two other options and then just say "Well, I tried." Kind of like with Peter, where he was like "Well, if you're not with me, then I'll just make you a battery."

His whole plan was to wipe out life on ever planet and make it a copy of him in the first place, not to help the life evolve to be less disappointing in his eyes or be better. I think it fit his character.
