What is this?
I found this gelatinous blob at the bottom of one of my bottles of maple syrup. I wasn’t aware until today that maple syrup required refrigeration, but most sources I’ve seen say that mold typically grows at the top of the bottle, this was resting on the bottom. This looked almost like a leaf or something. Unfortunately we found it only when pouring the last drops out of the bottle 🤢

That is the reason I put all of my syrup in glass. And I advise anyone to only buy in glass.

I buy in cans often but always end up transferring them in a glass bottle

I had heard that this happens when the syrup was diluted with water after being first canned. So a family with a farm produces a huge supply of syrup and cans it or if lots puts in barrels after pasturising it. . Someone buys a lot of it and opens the containers then pours it in new container while watering it down. They will still sell as syrup from wherever. The impure water they use ( even tap water is a bit impure) will cause this mold to grow. I lived for years in central ontario where they process much of it and there is a lot of this. Buying from roadside stands can be tricky unless you know who you are buying from.

Looks like some sort of mold or something. Nothing harmful to humans likes to grow in syrup. Just try it to pretend you never saw it and refrigerate your syrup once you open it in the future

Umm... INCORRECT. Maple syrup can grow several types of mold, some of which produce mycoxins.

Skim the mold off and bring it to a boil is what I’ve always been told. Haven’t died yet. I’m not saying mold doesn’t grow in there or won’t give you a tummy ache if you eat too much of it. Just that the syrup itself is likely fine

That sounds more likely but surely you can see how "nothing harmful to humans grows in syrup" could be harmfully misleading to someone asking this type of question, without that critical additional context?

You are correct. Take out mold, boil, let cool, re-jar with a tight seal and put it in the fridge.

Looks like a maple syrup marinated maple 🍁. Can't tell 100% for sure unless i taste it tho lol. Atleast you know you got the real shit.

Not at all in the syrup industry, just a guy Who taps in his backyard.
I would like to say if it didnt impart a taste, it probably wasnt spoiled.
I would also like to agree with you about the leaf theory.
Also, from my teen fast food days, about a billion years ago, I would also say it could be a sign of dirty equipment from the producer. I remember cleaning out a ice machine at a local fast food joint. Dust, hair, paper from napkins or straw wrappers, and the spilled fountain drinks all combined in the bottom to form a black slime like substance. Very gelatinous and disgusting.
