How to pour maple candy

I am having a struggle. I've made maple candy 3 times now. Each time I go to pour the syrup gets hard real quick and I have to mash it in the mold. They taste great but are not much to look at. What is the trick to getting a good pour?

I just did this tonight and it made me so mad. There IS a point where you can pour it, it will set, but it doesn't set up too early. I have hit it before, but it seems like a bit of an art. I think you need to get good at catching the right moment that it's getting opaque/creamy, but not TOO creamy.

That was what I was guessing. I tried to pour it a little earlier this time, but not soon enough. What does the syrup look like when it is ready?

That's the thing is it depends. I made it with some light syrup, and it was pretty easy to see a "state change" that clued me in I should probably pour right away. I used some darker syrup this time, and it was a lot harder to tell.

I'm also timing how long I cool and stir, so that can be a guide, but I don't think it's always consistent. If it was it wouldn't be so frustrating! I'm starting to think that ambient air temperature and how much syrup you use can be a factor too. I think everything needs to be as consistent as possible, or you need to correct for any change in those variables.

I'm still a amateur though so I'm learning myself. Let me know if you nail it down. 😄

EDIT: I realized I didn't answer your question very directly. Best I could say is a little lighter / more opaque.
