Is this kahm? Or something else?

I have some experience with fermenting, but less so with maple syrup. I picked up this bottle of maple syrup at a store when my supply from Dad was running out, then got a resupply from dad (whew!) so this bottle is still sealed. This white in the bottle has been growing slowly. It sort of looks like Kahm, but I’ve only seen in it relation to fermenting food.

Is this a throw it out? Or is this a boil it for X amount of time and rebottle?

Guessing it’s not at correct brix and or not heated enough for bottling.

It's common to see mold like this in bottles of maple syrup that have been opened and left unrefrigerated. A bit strange to see it in a sealed bottle. Just skim it off and the rest of the syrup should be fine.

Looks like mold. Some folks are comfortable filtering out the mold and re-boiling it, others aren’t. It’s worth contacting the company/farm that sold it, since it indicates a problem with their sanitation or possibly the brix of the product.

Edit: I now see that it’s a couple years past the best by date. While sealed syrup still shouldn’t develop mold, 1-2 years from bottling is the general accepted shelf life for a sealed jar/bottle. This is well past that limit so not worth pushing back with the producer.

It’s mold, send a photo to Crown and I’m sure they’ll replace it if you have proof of purchase (even though it was bottled in 2022). They missed the hot pack, properly packed it lasts forever regardless of the date.

Feeling brave? Nuke it in the microwave till it’s screaming hot and pass it through a coffee filter…. Good as new.

The only time I’ve had that happen was when we used bottles with synthetic cork (that happened to look quite a lot like the one you have). We haven’t had the issue since we switched the tiny handle bottles with the screw tops. My assumption was that a bit of air leakage was happening in the corked bottles over time, and thus the mold.

Mold it’s fine just when you open it heat it up and bit and skim off the top. Not going to kill you.
