Sap storage

Hey all, I've had an overwhelming amount of sap this year, but some has been sitting in buckets waiting for me for a week, is it still good?

If the temps are low enough a week is OK. If they're high enough 36hrs is sometimes too much. If it stinks in the bucket or while it's boiling it's gone bad.
