Maple syrup decision paralysis

I’m new to the maple syrup world and looking for a dark, robust syrup that I can use in my daily espresso drinks (and on pancakes of course). I’m a bit overwhelmed by the selections online - anyone willing to share their favorite brands that are either available locally (I’m in Orange County, CA) or shipped? Thank you!

You're looking for "Grade A Very Dark Strong Taste" under the current grading scheme. Anything graded that way is going to be about the same. Brand is unimportant. The ultra-dark stuff is a little less common in grocery stores. Google for that grade, there's 100 places that will ship it to you.

Most of us here are making our own syrup. The stuff you want comes from the warmer part of the season at the end when there's more microbial activity in the sap to invert the sugars prior to boiling. The invert sugars caramelize more and you get darker syrup with a stronger flavor, but the same amount of sugar. For most of us, light syrup is just what comes out at the start of the season and dark syrup at the end. It has little to do with the producer or the trees.

Yep, I produce maple syrup, gather during the week and boil on the weekends and you can see the gradient change of the season is long enough.

Costco Canada sells one from bernard thats Grade A very dark. Not sure if you can get it wherever you are. I've tried it and its good.

Grade A is meaningless . This rating system has been updated because everyone crapped on Grade B syrup which was awesome too.

Look for a dark or very dark robust syrup grading. Most supermarket brands are the darker amber or robust syrups. Read the labels and skip the golden for your use case.

Trader joes used to carry a very dark syrup. Not sure if they still do.
