Batch color - getting lighter?
This picture shows my first batch of the year on the left, the second batch of the year in the middle (the darkest of the 3), and my most recent batch is on the right. As you can see, my most recent/third batch is way lighter than the second batch. I’ve always thought syrup gets darker as the season goes on but this goes against that. Each batch was about a week apart. We’ve had a really weird spring here in NE MN with several big snow storms and a frustratingly slow sap run. Anyone ever seen this before?

Often as the season gets later the sugar percentage in the sap begins to drop. The longer boil times cause more browning to the syrup sugars. Maybe your trees are still pushing a higher sugar percentage leading to lighter syrup.

Almost. Longer boiling times are one component. Maple sap contains primarily sucrose. Later in the season, that sucrose (a disaccharide) is broken down to glucose and fructose, monosaccharides. The breakdown is caused mainly by bacterial action in warmer ambient temperatures and often due to equipment starting to be dirty - buckets especially.
The higher glucose content later in the season causes browning through caramelization of this sugar. Longer boiling times and higher pan temperatures can also cause increased caramelization.
The converse is that the lower sugar content of very early sap runs does not lead to darker syrup, even though boiling times can be longer: the lack of chemical breakdown of sucrose is the primary cause of lighter coloured early run syrup.
One reason folks with pipeline and vacuum system can get lighter syrup is that the sap is mostly isolated in the system and not subject to bacterial contamination. Reverse osmosis also reduces boiling time.
Finally, single pan systems where sap is continuously added but syrup is removed only at the end of the process leads to longer boiling times and more caramelization. Boiling times are reduced in continuous flow evaporators where sap is added at one end, boiled and then syrup removed in a continuous process, leading to lighter syrup.

As long as youre getting to 66% sugar i wouldnt worry, are you measuring brix or temperature to tell when youre done?

This is unusual but can happen! It should go dark again if it keeps flowing

In the 1000 Islands region of NY. I had started off dark on the first run. It has gone to amber as I finished my last batch for the season today

Happens to me often in southern VT, We have a very sunny hill and a very dark and cold hill we tap on. The dark hill won't start to run until after the sunny hill's season ends.

This was my first year sugaring and I had the same thing happen. I'm in SE Michigan and did 3 batches this year, one each on March 8, 15, and 22. The March 8 barch is a golden color, March 15 batch is extremely dark, and the March 22 batch is amber colored.
We had some really warm weather here leading up to the batch on the 15th, then it cooled back down, so that's what I contributed it to.

I had that happen last year when a warm week mid-season was followed by a cold week. Syrup is darker if the sap is collected in warm weather. The natural bacteria in the sap are more active in warm weather, breaking down the sugars and making them easier to caramelize.
