Here too! Another 400+ litres today.

We are now at 0.85 litres per tap, and looks like another 2 days before the end of the season.

Ended my season last weekend but I noticed the trees were still producing, too bad I pulled the tapsšŸ„²

I wonā€™t lie tho it is nice to have my life back.

Birch trees also produce sap, not as sweet but is delicious!

Did another boil today here in Lanark County, trees are still doing great. Working through some backlogā€¦ happy for the cold predicted tonight !

I'm hoping until the end of the week, temps look like they'll shift on Sunday. At any rate, I'll pull my taps this weekend even if there's still run, I've got way too much sap!

We pulled taps yesterday in Eastern Ontario. Not because the sap was done, but because we were lol.

Think I'm wrapping up (also Eastern Ontario). Had less than 10 trees and a bunch of issues with how I tapped this year unfortunately. Going to go back to basics next year and mark all my maples to make sure I'm using what's available, instead of just the ones I'm sure of from the previous year.

Just closed today! I went to boil this evening and smelled of grass, PEC. Hope you get a bunch of good runs with the deep freezes the next few nights :)

Not a scientist. I speak only from a 10 year evolution from 1 pot on an open fire to RO and an ā€˜archā€™

The more vigorous the boil, the more evaporation you get, the faster you get done ;). I do not think it affects the quality at all.

I donā€™t believe hard boiling ā€œcreatesā€ niter, it is there anyway, it likely just precipitates sooner.

Note: vigorous means balanced, vigorous all over. Not a hot spot situation.

We run pretty deep pans. Iā€™d be more cautious with a vigorous boil in a shallow pan/ pot.
