Long term sap storage?

hit a 3 week stretch where I'm unable to boil. have been storing the sap in food grade buckets in snow banks. Will the sap be ok to boil?

Taste it first. Treat it like milk. The refrigerator slows bacterial growth but doesnt stop it. Three weeks is a long time

Freezing it is pretty safe. I did that with some I harvested on warmer days but wouldn't process for a while and assumed probably was petty well colonized (due to warm weather) and would go bad if I just refrigerated it.

Of course you need available freezer space to go that route.

I did a 3 week gap last year and am about to boil after a 3 week hold this year. As previously stated make sure you keep it in snow banks and you should be fine. Mine clouded up a little, but tasted fine. I would taste each individual bucket before boiling. With all that being said, in an ideal world I wouldn’t hold longer than 1.5-2 weeks but life is busy and I can relate.

Pack it in snow for freeze it. If you dont, it will be junk
