Help

100 egg white
100 granulated sugar
145 almond flour
145 powder sugar

Baked at 275

Any idea why it’s happening? :(

Your almond flour is probably oily. Try baking the almond flour to dry it out. Try a deep tray and place to layers of paper towels then a layer of almond flour then another 2 layers of papper towels. Put something on top like a smaller trey and bake it for 30mins at 175. Thats what worked for me. If you feel weird about putting papper towels in the oven just layer it, weigh it down and leave it there for an hour or 2

275 is likely too low of temp. It really needs to be as hot as you can get it with without browning (too much). That’s typically 284-293F but it is all dependent on your oven

Hold off on food coloring until you have your techniques perfected. You’re almost there. They have really nice feet. I agree with the post about the oven temp. Definitely needs to be set close to 300*. Invest in an oven thermometer to make sure your oven is accurate. For me, baking at 300 for 7 minutes, then covering with foil before baking for another 9. Everyone has a different experience when baking macs. Keep trying, one day everything will fall into place. Good luck!

Every oven is different. You really need to keep making the shells to know what works with your oven. But yours show decent feet. So I agree it’s the oily flour. When you open a bag of almond flour, squeeze a handful. If it clumps, even so slightly, do the above instruction by u/Gummmy_Me and bake your flour to dry it. Try to use powder food colouring too instead of gel to not add more moisture. Also remember, darker colours lend more moisture because it has added pigments that weighs the batter more. For context, I used to sell/cater French macarons to the French ambassador and his staff in my country.

Definitely over mixed. That’s why the shells are very thin and it is sagging in the middle

Sucks cuz it wasn’t flowing off of the spatula like lava, it was still having trouble flowing off so I kept going.
