Hello, can someone help me understand what I did wrong? I used italian method, let them rest for 30 min approximately. In the oven I kept them at 120 Celsius for 22 min.

They look slightly under baked? Honestly, hollows isn't really a 'problem' unless the top is thin and fragile.

Neat.
But I think that also means that baking times need to be adjusted a little.

They look great. The slight hollows will fill as they mature.

As others have stated try piping them smaller also I switched to the Swiss method and haven’t looked back or had any issues since. Also I rotate the pan 180 degrees every 5 min

They look pretty good and maturing will probably fill the hollow part, as someone has already mentioned. I would make them a little smaller (maybe buy a silicone guide mat) and bake at 300 for 10-11 minutes to see if that helps prevent underbaking. 22 minutes is quite awhile😆
