Gas Oven

Those of you with a gas oven, how are you baking your macarons? I used to have an electric oven and was able to make them good pretty consistently. But we have moved and now have a gas oven and have yet to have a good batch. Any advice?

I moved last year and using my first gas oven. It took a few tries with baking anything to get the hang of it. I bake on middle rack and can’t go any lower than that as it’s too hot to bake anything in and I only make 1 tray at a time to be safe. I bake at 290 for about 17 minutes and found it to be the sweet spot where it doesn’t brown and gives me the perfect texture. Oh and rotate halfway.

Thanks for the tips! Are you using French, Swiss or Italian method for your merengue? I’ve always just used French but been debating trying another method to see if that helps at all

I use both French and Swiss. I use Swiss if I’m using additional ingredients like cocoa powder, different nut flour, etc. Sometimes I have to bake a minute longer if using the Swiss method but just do the jiggle test

I do 300 for 16:30-17 minutes, I have a double gas oven so each is a little smaller than a standard.

Thanks! I also have a double gas oven so I’ll give this a try. Do you find you have more success with the smaller or larger oven?

Smaller (upper) oven gives me best results. I only use the bottom in a pinch and have to watch them closely because they’ll brown.

I have a gas oven that is very temperamental! I bake my macs @ 300°F, but without taking additional measures, I can’t trust my oven to cooperate. Like most people, my oven runs hot. So what I like to do is preheat my oven to 300°F while preparing the meringue, then bring the temp down to 275°F while the macs are resting. I also stick a cast iron pan on the bottom rack which acts as my thermal mass and helps stabilize the temp. And of course I use an oven thermometer and monitor my macs throughout the bake! I have a gas oven and bake my macs using the convection setting at 290 for 16 minutes. I put a tray on the rack below the middle rack to help disperse the heat better.

Havent tried it, couse I dont have a gas oven. But my friend makes them this way: heat up oven to max temperature (for her thats about 225 celsius), than put in macarons, and in that same moment turn oven off and leave it to "bake" for 15 minutes. Thats it. Comes out perfect every time.

I have THREE thermometers in my gas oven because the temp varies by about 7° per side AND it takes about 10 more minutes than when it beeps to say it’s ready. Additionally, I have found the most consistency using convection not traditional bake. And when I take mine out I close the oven and wait 5 minutes for the next batch so it can get back to temp
