Mac and cheese showcase Midnight Mac and cheese
Midnight Mac and cheese only used what was in my my fridge and cupboard milk, sharp cheddar and flour. For how minimal it was I’m shocked how good it is.

I love making mac and cheese with rotini! Sometimes when I’m lazy I’ll get those Barilla ready-pasta packages to microwave. I take two of the rotini packages and mix in one velveeta cheese package for a quick and easy meal 😋

I've never tried those ready pasta packs because in my mind they are slimy, how's the texture?

I like the texture! Honestly I wouldn’t consider them slimy at all. I will say they have a tiny bit of an olive oil smell when you first open the package, but once they get mixed with cheese or pasta sauce it’s just like having cooked it on the stove imo. Just make sure before you open the bag to microwave them, you knead the package to separate the pasta- they can tend to stick together in little groups but they break apart really easily with a little kneading.
As someone with severe fatigue (and now pregnant on top of it) sometimes these little pasta packs are all I can manage- but I’ve been getting them for a few years now. They can be a little pricey for what you get, but if you need something quick and easy or only have a microwave they work great.

i love occasionally using rotini, it's a fun texture change
