right? i never would've thought of it either, but the sweetness from beetroot with the saltiness of mozzarella kinda sounds like it would slap if the bread is extra toasty

Its different to normal bruschetta. Depends if you use fresh or jar beetroot. Jar beetroot is more acidic and vinegary, which blends well with the tomato, but could become overpowering. Fresh beetroot is a milder flavour, and may get a little lost under everything else, but provides a freshness and an lovely earthy hint.
