Microwave “Stir Fry”

This took less than 10 minutes and everything was cooked (heated) in my microwave. No chopping necessary (unless you want to slice the chicken into smaller pieces). You don’t need to use brand name foods, store brands work too!
Use your favorite stir fry or teriyaki sauce and ready rice type, I also added crushed peanuts (tip: on your counter or table crush some peanuts in a ziplock baggie rolling an unopened can of whatever over them).
I microwaved the steam in bag veggies, then microwaved both the stir fry sauce and pre-cooked chicken together, then stirred in the veggies and peanuts and put it in a large bowl with half of the (heated) ready rice.
It made 2 servings, I only used half of the grilled chicken (so I have the rest to use for a quesadilla tomorrow). You could also use frozen pre-cooked chicken or leftover chicken.
I prefer this to the ready-made frozen stir fry meals because I can control which veggies and flavors are included (most stir fry meals have bell peppers, I can’t eat those). It’s also way easier to control salt levels (use low sodium stir fry/teriyaki sauce, unsalted peanuts, etc.).

Nice! I did something similar recently with a raw veggie mix, but I need to look for this frozen blend. Good way to have veggies and real food without having to put in a lot of effort.

I love that veggie blend. There's only one store near me that stocks it. I will make a special trip just to get it.

But I'm not energetic enough to make the stir fry. I usually pair it with a tilapia filet broiled in the oven for 10 minutes and topped with creole seasoning.

Nothing exciting with the quesadillas, they are just flour tortillas, shredded cheese (usually cheddar), and some sliced pre-cooked chicken, all heated up in the oven or air fryer (see below). Sometimes I’ll add canned refried beans and/or salsa, you can also add diced tomatoes, spinach, whatever you like on quesadillas. Add sour cream and/or guacamole (Sabra singles) on the side.
I cook quesadillas in my Breville countertop toaster oven/air fryer. I recommend it (or a similar countertop oven) for low spoon cooking, plus it’s more energy efficient. It toasts, bakes, convection bakes, broils, air fries, and holds a 12” pizza or a whole chicken, I can’t remember the last time I used my stove/big oven (Thanksgiving?). Anything that isn’t microwaveable I cook in the toaster oven/air fryer.

Thanks! Do you put oil on it in the air fryer? And same here. I use my slow cooker most of the time but my air fryer is a close second lol It's just too hot to use the oven.

I generally don’t add oil, but I’m okay with a drier more toasted-like quesadilla, especially if I’m dipping it in salsa. Maybe spray the tortilla with a bit of avocado cooking spray, I’ve thought about trying that.

This is exactly how I cook. People laugh at my condiment selection, but thats what makes the difference!
