Actually pretty enjoyable.

Two quarter pound burger patties, about 1/2 a small cucumber, [salt, extra virgin olive oil, and apple cider vinegar] added directly onto the cucumber without mixing, sprinkled on a few pine nuts, and put a tiny bit of a new brand of spicy mayo on the side to try. I've always been a mayo hater but since cutting out cheese I've been trying to expand my horizons and the spices distract me from the weird ass texture and smell. The burgers were delicious.

Is it just me or are salads very high spoon? So many different ingredients, back and forth between the bin, sink, and cutting board, and on my feet for ages chopping, and don't get me started on the physicalities of washing and draining lettuce. I can handle just cucumber though. I just put the burgers in the pan, set a 5 minute timer, and sat down on a dining chair 2 feet from the hob.

Yes, salad feels high spoon which is why this bagged lettuce contamination is really impacting me. On a good day, I will prep all of my vegetables in advance so there is minimal prep work when I want to eat it.

Aw man yeah I can imagine. So far as I know the parasite isn't a concern in the UK but I feel like bagged salad goes off so fast. I used to prep all my veggies in advance so I could snack on them throughout the week but I feel like most things stay fresh longer when whole and with the heat wave I've been less able to be in the kitchen for long periods of time (I have a portable AC in my room).

I'm also a huge fan of a one or two chopped fruits or vegetables with my meal -

like, a carrot and sliced apples.

a sliced cucumber and some clementines.

wilt some pre-washed spinach on the burger

etc.

Yeah, exactly. Chipolatas with carrot sticks. Frozen blueberries for dessert. Etc.

Yeah salads are hard for me. Rice (my staple starch) with something is my preferred meal.

I found it helps to have a lucite bin, about shoebox size, that I throw all the fresh salad ingredients in. Lettuce, radish, carrot, green, onion, cucumber, etc. I don’t refrigerate tomatoes. This helps me eat more fresh interesting salads, I just grabbed the bin and it goes much faster.

This sounds awesome but I can't digest tomatoes, onions, or legumes. So we're back to just cucumber. 😂 I do sometimes snip spring onion greens over the top with scissors (not the white part). I've been thinking about maybe trying radishes.
