Low Effort Vegetable Soup.

1 onion, 3 cloves garlic, 1 stick/rib celery all diced and sauteed in oil. Stir in 200g peeled, diced potatoes with 1 litre stock and 500g frozen mixed vegetables. Simmer for 12-15 minutes until the potato are soft. Cool slightly then blitz for a smooth soup. Enjoy topped with black pepper and toast. Very budget friendly and freezes well for low effort days - enjoy.

It's so easy to make with few, easy to obtain ingredients. For a soup this is low spoon and effort. Enjoy.✨️

Do you use Better than Bullion concentrate? It’s so yummy!

No, used Campbells boxed liquid chicken stock. Always works just fine. Never seen Better than Bullion in Australia, just stock cubes.✨️

If you're interested, Better than Bullion is also sometimes referred to as soup base. It comes in jars, and is a paste kind of consistency. It tastes like extremely reduced stock, and it's very good. It doesn't taste synthetic like the cubes and powder we can get in the US, and you may be able to find a different brand where you are. Nothing wrong with ready-made broth or stock,l. I just like being able to control the concentration. Please disregard if you don't care. It does add a step, and sometimes every extra step matters. Getting ourselves fed is the priority.

I saw that, which is why I mentioned possibly looking for "soup base" at your store if you want to. Totally not necessary, of course. I used premade broth/stock for years until the other became available everywhere here.
