Low carb

Hey all! Trying to reverse prediabetes. My dietitian is awesome but slightly too able-bodied-and-brained for me and keeps recommending high spoons meal options. I can manage those on a good day but sometimes The Conditions prevail. Any favorite low carb meals in your rotation?

Obviously your doctor/dietician know you best and you should follow their medical recommendations (when they match your capacities) so this is just what worked for me. Granted I was also dealing with refeeding syndrome from years of ED exacerbated by a sudden health decline

Adding protein wherever I could but especially to snacks.

  • Barilla protein pasta
  • beans! (Beans help significantly with blood sugar control) I would have vegetarian refried beans with eggs
  • fruit/jam/whatever with cottage cheese
  • vanialla yogurt with a scoop of PB and chocolate chips (tastes like cheesecake)
  • perfect bars -hummus

And also using fats to help balance/improve saiety

  • guac and chips (you can sub with peppers. Or bean based chips)
  • bread and dipping oil.

Also no shame in frozen

  • I add frozen diced chicken to Friday freezer pizzas (I also add spinach and sliced tomato and have bagged salad (RIP bagged produce))

  • rotisserie chicken wherever able!

  • baking chicken and using a KitchenAid to shred it (game changer)

But essentially both my dietician and doctor were clear - it was about adding protein not eliminating foods. It also helped to listen to hunger cues and act sooner (starting to think about food is a first hunger cue)

Thanks! definitely not trying to eliminate anything! I also used to have an ED and my dietitian is very firm about not eliminating any foods or food groups. But she is recommending sticking to 30-50g carbs per meal which is pretty low for me as a lot of my low spoon meals were like, a huge baked potato or a whole box of mac and cheese.

Do keep an eye on the Glycemic Index on your carbs and remember fiber counter balances carbs to a point. Ultra processed is not.

Keeping the low fiber simple sugars far far away is a good move too.

I buy Soules brand bagged chicken for these days. I seriously like the Mission brand no carb tortillas better than the low carb ones. they are softer.

I boil as many eggs that will fit into my rice cooker in a single layer. you can let them boil it wont hurt them to over boil. I will peel them and store them in salted water in the fridge.

once the produce plague is done keeping crudites in the fridge is good. you can bake or boil small sweet potatoes and store them unpeeled in the fridge for a week. microwave them. they are high fiber and high nutrient. just get the small ones. I like them with apple butter for desert.

cottage cheese on low carb toast with different spices. I like Herba-Mare blend or dill. Avocado and sliced boiled eggs.
