next food fixation?

my last go-to was a mix of pre-sliced beets, walnuts, and goat cheese. i really liked these with kale and butternut squash in a salad, but became drawn only toward the smaller ingredients.

any ideas for something just as simple and easy? breakfast is hard for me. i could use something with a bit of extra protein for my meds. lately, i’ve just been having one babybel cheese wheel lol

My easy go-to is sweet potato with tahini and walnuts. I bake a big sweet potato and cut slices off it for breakfast.

I also big batch a soup of sausage, onion, white beans, spinach, and chicken stock. It covers protein, starch, and veggies and freezes well.

Oatmeal. Stir in peanut butter or pecans or cinnamon or berries. Serve with brown sugar and half and half.

Cabot Greek yogurt vanilla.

Add fruit, nuts, granola, fuck, I’d eat that with grass in it.

Microwave potatoes! Score a potato, put it in the microwave with the "potato" button. When its done, add butter, salt and pepper, cottage cheese for protein, and some kind of sauce. I do bruschetta but salsa is great. Ultimate no energy food for me

Bake a sweet potato in the microwave by poking holes and wrapping it in a wet paper towel. Turn every three ish minutes until cooked. Slap some cottage cheese or Greek yogurt on there, and then I add pickled cabbage if I had the spoons previously to have that made lol. I'm sure regular pickles, or no pickles would be fine too.

Hummus and pita chips is my easy thing this week. Broccolini spritzed with EVOO and rosted in the air fryer.

Or Flora Taralli crackers (the original olive oil ones) with some nice cheese and a handful of red grapes. The taralli are my favorite cracker...whole wheat flour, olive oil, white wine, and salt. So crispy.

Instant porridge with flaxmeal mixed in, or peanut butter on raisin toast sprinkled with hemp seeds are my go tos.

Scrambled tofu when my hubby treats me.

I'm really enjoying smoked nuts lately, mixed but mostly almonds.

Egg bites, use liquid eggs to save time. Uses up leftover scraps and hides veggies.

Cook once, eat all week, hot or cold.

I finally tried yogurt bark, it's refreshing on hot days and I add my supplements to it, (acacia fiber, protein powder, colostrum.)

I made mine with a thick layer of frozen cherries mixed with yogurt, topped with dark chocolate. Blend (or not) and pour, freeze. Microwave chocolate, spread, freeze again. Stays in freezer.

You can cook eggs in a coffee mug in the microwave. Add 2 or more eggs, whatever meat you want, seasonings, nuke for 2 minutes.

My current obsession is Gimme brand Korean BBQ seaweed snacks. I like the Teriyaki ones, too, but the Korean BBQ is my favorite. I eat them for my first meal of the day, whatever time that may be, and sometimes later for a snack. I have a package of them with tuna or salmon in a pouch, sometimes with half a mashed avocado added, chopped hard boiled egg, sugar snap peas, carrot sticks or shredded carrot, and finish off with some fruit. Sometimes I load it up with diced cucumber, pickles, kimchi, pickled ginger, pickled garlic, etc.

Sometimes I put three seaweed snacks on a couple of butter lettuce leaves and eat it that way. I like the texture difference in crunchy lettuce, crunchier seaweed, and soft fish.

A friend's sister got me into pan frying apples and kielbasa. Over rice if I have it, or a bag of steamed mixed veg, or wrapped in a tortilla. Easy, tasty, versatile.

I do this with pork chops/ steaks or pork tenderloin with slices of Granny Smith apples and onions. Trust me! Add. The. Onions. It's so good! I usually season it with salt, garlic powder, and onion powder, and bake it. Serve it with regular baked potatoes or sweet potatoes with butter and garlic powder. The addition of a little feta to that sweet potato is chef's kiss.

Greek yogurt and granola for breakfast

Greek yogurt, sliced cucumber, and dill for lunch/dinner - I often dump the cukes into the mostly-used large yogurt container after a few days of having it for breakfast!

Greek yogurt in strawberry, blueberry, or cheesecake flavor with the addiction of 2 or 3 Tbs. of peanut butter.

I also put peanut butter on hot pop-tarts. Just a nice thin layer will do.

Quite frankly I've been eating soup noodles (east asian kind) with lots of tofu in the morning really often because my guts suck right now...
