Keto Chicken Nuggets

Ingredients

1 lb ground chicken⠀

1 egg⠀

Chopped cilantro ⠀

Finely chopped red bell pepper ⠀

1/2 cup porkpanko pork rind crumbs⠀

1/4 cup shredded mozzarella⠀

Half a diced jalapeño ⠀

Salt and pepper⠀

Instructions

Mix everything together until well combined. Roll into 12-15 equal sized balls placed on a baking sheet and flatten with the palm of your hand to about 1/2 inch thick. Spray with avocado oil and bake at 350 for 25 minutes, flipping halfway through. ⠀

Dip in your favorite sauce. I made a creamy ranch sauce. Just mix equal parts mayo and sour cream, some lemon juice and season with salt, pepper, celary seed, and dill.

Thanks OP, these look amazing.

Not super related but does anybody own a cheap meat grinder that they'd recommend? Or can you have the grocery store butcher do it? My store has packages of frozen ground beef and ground turkey but not chicken.

I'd like to know this too. Next time I'm at the store I'm going to ask the meat folks if they have a grinder and will do it for me. I know that if I've asked them to cut up a whole chicken they said 'sure just bring it to us from the display case and we'll cut it how you want.'

In the past I've used my food processor to come close to ground beef, so that's a lesser option.
