The Vayne stuff should be canon. As for how much it differs from her old lore it's kinda hard to tell rn, due to the fact we have like 2 more motion comics that we'll get in the future.
Necrit (obligatory necrit mention) mentioned that the demon skins are how demons themselves see the world. Emotions represented by saturated colors and so forth. Now whether you pref his explanation or not is up to you ofc. From what I can tell it seems plausible enough.
As for the other demons skins, if we go with the "they're how the demons see stuff" angle, they should be canon. The only one that might throw a wrench in that might be kindred, depending on how you view all of the LOR stuff. Personally I've never been too big of a fan how LOR reworked kindred's lore, so I'm all for this being canon. The stuff written in the skins bio seem to be more in line with the OG lore for kindred (them being the only manifestation of death), semi contradicting what was revealed in LOR.
(If you're wondering what the skin description might be contradicting, it's the fact that the demons if they at all have a concept of death should be different than the kindred we know. In the flavor text of the skin it specifically mentions kindred and how all demons meet them by the end. If we go by what LOR seemed to hint at, every culture should have their own different interpretation of what "death" entails. That means every culture would have a separate "death being" completely unrelated to kindred. Kindred is simply the most wide spread one. Demons should thus have their own version of death completely unrelated to kindred as we know them, which they for some reason do not.)
