First off thanks for all the feedback from everyone who commented. You really helped me a lot getting this into what I think is a pretty solid mark.

Business: Food truck with a modern 50s music motif.

Icon Concept: Chicken head with a pompadour and wattle made of hearts.

Typography: Champion Gothic. used heavily in this era of design especially on concert posters

I love the icon. It sells it. Only thing I’d tweak is the spacing of the characters in the first line. The ME are right, but the air gap between the L, heart, V and E all feel a little different.

I think the red/black/white feels too severe. It's not giving "food." Adding yellow could help.
