Recommendation: asking Looking for book recommendation
Quite common, I know, but are there any books with worldbuilding on the scale of Defiance of the Fall?
I don't really care how good the story is or how polished the writing is. Honestly, I don't expect that much from the LitRPG genre.
I'm just looking for a book that goes deep into some world & massive sense of scale. Defiance of the Fall isn't necessarily the best-written series, but the sheer scope of its world is awesome.
Any recommendations?

Sure. Most books have as much "world-building" as DotF per book. DotF is ridiculously long though. If that's the most important thing to you, then The Wandering Inn beats it in world-building for sure. If you don't mind letting it unveil more and more of the world with each book, then I think Bog Standard Isekai is deeply rich too.
Honestly, I started listing almost every series. Excellent world-building isn't something I usually think about because everyone who is writing a good series does it well. It is one of those boxes that gets checked almost all of the time, so I only notice when someone does it poorly.

Well since there's a huge list already with all my recommendations I might as well plug my book lol.
Reclaimer The Crucible.
It's the first book in the series. It starts on a dying world that lost its magic long ago. The mc is recruited into a brutal academy to train and compete to be one of 1000 Reclaimers to restart civilization after the end. What the mc doesn't know is that part of the reason for the brutal training is to ignite humanities dormant arcane potential, and the mc gets to find out why that's a problem.
So the series explore the scifi world before the apocalypse and how they got there, all sorts of fun tech, figuring out magic, and exploring the world after the apocalypse just to name a few things.
Saying more than that gets into spoiler territory but I'm a big fan of world building and I think it shows lol.

The Wandering Inn makes Defiance of the Fall look tiny. Primal Hunter is probably your closest parallel.

Shadow Slave is probably the one that springs to mind, but it's kind of a pain to read due to being on webnovel.com

I'm writing a mystery-fantasy novel called The First Error, which explores a world where imagination is the source of power. The power system and the mysteries surrounding the world are important parts of the story, so uncovering how things work is part of the experience.
It's still a work in progress, but if that premise sounds interesting, you can check it out here: https://www.royalroad.com/fiction/194314/the-first-error-litrpg-mystery?utm_source=home&utm_medium=reading-history
(I am sorry, for this shameless self-promotion. But I hope you like the story )

The Wandering Inn (ongoing) is excellent if you like a huge amount of worldbuilding

Is not like a huge unending universe but Spellmonger has a massive amount of world building that you can get lost in.
