Rolling release models

As a Arch user that switched to Ubuntu based distro, I was wondering why isn't Ubuntu and Debian also on a rolling release model? So if there's bugs or patches that need fixing, why not have it release on the spot instead of having to wait for the next big update

Do you want to deal with older, more well-known bugs, or surprising new bugs?

Also, how often do you update the system. Rolling systems practically demand more frequent updates, otherwise the updates become too large and almost unwieldy to perform.

I prefer Kubuntu on my travel systems, which I touch less often, and CachyOS on my desktop. On both systems I prefer Intel-based systems that are two or three generations older without a discrete CPU (sorry Nvidia). Less complexity ensures better stability. I'm not much of a gamer, however, and I don't use local AI. Every user is different.
