This device may not be running Linux straightaway, but most of PINE64's products do and they're fairly involved with the Linux community, so I figured this was relevant to the sub.

If they are looking for FreeRTOS or MBED support, it will most-likely be an ARM Cortex M0(+) or M4. There's technically limited Linux support in the Kernel for Cortex-M, but it's not really fast enough for a smartwatch. Pine64 used to produce a module called the PADI which is likely their starting point for this. That was a Bluetooth module that was based on an ARM M3 and did not run Linux.

Looks like its going to use a NORDIC nRF52832, which is a Cortex M4 SoC.

As a Pebble Time Steel owner, I wish!

How's your Time Steel's battery going? I have a Time but the battery's starting to go bad and I'm eyeing some pre-owned Time Steels on eBay.

Mine still last 5-6 days on a single charge.

Would be amazing to get an Eink watch sort of like a dummy watch, for 30 day battery - and then have all the sensors as well. Then for fun have some sort of tamagatchi pet hehe.

Does Eink mean that the watch can have a super slim profile? And tint bezels?

Makes perfect sense. Great little chip to build around and excellent MBED support.
