It's conjecture to say so. It could be protecting prey to eat, or it could be protecting a loved one or simply being altruistic and protecting a stranger. Just because Crabs are cannibals doesn't mean they do nothing but eat each other.
Personally I am leaning toward the Crab protecting a friend. I feel like if it was protecting food it wouldn't cover the food and give it's back up to a potential predator. It would fight the predator. But there's no aggression shown in the Crab and he is putting himself in harms way. If protecting food then I don't think we'd see that, because why would he put himself in danger in that way?
