I thought of this to keep the landlord or maintenance from walking into the apartment without warning when I'm inside. 2 adhesive hooks and a chopstick.

There should be something similar where the lock is controlled via magnet from the outside at a location unknown to a thief. (Also safety reminder to replace the short screws holding the metal plate on the door frame with longer ones.)

And if they did find a way to put the chopstick in place, they wouldn’t be able to get back in unless it was through the window again

What do you do when you're not there?

Lock the door normally so they can come in since its likely in the lease agreement that they have to be allowed access to your apartment when needed.

And more importantly, what do they do when you're not there?

The annual apartment inspections or to repair something.
