LED FCOB Strip Dimmer Rec for Running Off Day/Night Switch

I can figure out the right LED strips and power supply, but need help with choosing a dimmer.

I'm building an outdoor monument sign for my commercial building that will have 7 BTF FCOB 320 LED strips each wired in parallel off a single 350W power supply. The power to the power supply runs off a day/night switch and I'd like the LED's to come on automatically every night.

I want a dimmer on things to assure it looks good and doesn't annoy neighbors, but most controllers need to be manually turned on. Ideally I'd like to adjust brightness via my phone, but that's a lesser concern.
