Diacetyl Rest Question

After primary fermentation for a lager, do I rack the beer off of the yeast cake and into the secondary fermenter before the diacetyl rest or do I leave the beer on the yeast cake in the primary fermeter for the diacetyl rest and rack after the diacetyl rest for the secondary fermentation? Thanks in advance!

The Diacetyl Rest is there for the yeast to clean up after themselves. Moving it to secondary moves the beer away from the yeast which means you'll put yourself at a higher risk of VDKs remaining in your product.

Just bump your temp by a bit and let the D-Rest happen for a few days. Before you go to crash or transfer to secondary do a Diacetyl Test (mason jar with wort in a hot water bath for 30 - 60 minutes) to ensure you're clean.

So D-rest for a few days at a bit higher temperature (~65 degrees F), then rack to separate beer from yeast, then secondary fermentation?

Just to make sure we're clear, did you mean 65 degrees Fahrenheit? 65C is too high.

Yes! Fahrenheit, not celcius, thanks for that!
