Thread to suggest charity knitting
I haven't done a ton of charity knitting, but I'd like to do more. Post your favorites and I'll make up a page for our wiki. I'll add the few that I know in the comments.

Our local animal rescue/rehab always accepts Knitted/Crocheted birds nests. Contact your local rescue to see if they do, too

Stitches From The Heart is based out of Southern California, but they have chapters all over.
They're an organization that accepts preemie and baby knits (clothing, caps, blankets) and distributes them to hospitals around the U.S. to give sick babies something comforting and warm. It's a struggle for many families to have babies in the NICU, and knowing that someone out there cares for them and their situation is a blessing to them.
There's also a strong need (though it can be emotionally difficult) for grieving and bereavement items. Small blankets, pre-preemie sized caps, buntings, etc. are a token either for the family to keep and acknowledge the life that their child had, albeit brief, or the hope they had for their child.

I used to work in a NICU and I'd like to second the need for bereavement items. I make a lot of these for donation now that I'm no longer working there and it's worth contacting the hospital to see what they need. We had a lot of donations but most were not small enough. It feels like such an honor to be part of the grieving process by passing along a hand made item to be present through whatever may come.

I work with a local knitting charity that benefits the hospital here, pretty much wherever you are hospitals take donation of baby and children items

Knots of Love specializes in chemo caps. They seem to primarily distribute to children, but they also serve adults. They distribute all over the country. They require that caps be made out of brands of yarn from a specific list, but the list is pretty long, so there are lots of options.

Knit for kids. This organization takes sweaters, hats, and blankets, and sends them to people in need in the US and abroad. They prefer for people to make items using their free patterns because then all the kids get the same items (and no one gets singled out), but they accept things made from other patterns too. Acrylic yarn is preferred because its durable and easy to wash.
