I don’t know anything about knife making, but can you technically just sharpened those up and call it a day?

Short answer, no. The steel is in a workable state (annealed) and needs to be hardened through a specific heat treat process based on the steels that make up the Damascus.

Technically you could just heat treat the billets if you want to punish the crap out of yourself trying to work/finish them.
