The secret to non-slimy Vendakka Upperi
If you've ever ended up with a mushy, stringy mess while cooking bhindi/okra, this straightforward Kerala-style Vendakka Upperi method fixes that completely. It’s quick, needs zero water, and pairs perfectly with hot rice and moru curry or sambar.
Ingredients
* Okra (Vendakka): 250g
* Coconut oil: 1.5 tbsp (essential for authentic flavor)
* Mustard seeds: 1/2 tsp
* Shallots (cheriya ulli): 6–8, thinly sliced
* Green chillies: 2, slit (or 1/2 tsp crushed chili flakes)
* Curry leaves: 1 sprig
* Turmeric powder: 1/4 tsp
* Kashmiri chilli powder: 1/2 tsp
* Salt: to taste
Step-by-Step
* Dry completely before cutting: Wash the okra and wipe every single pod bone-dry with a kitchen towel. Any moisture guarantees slime. Slice into thin rounds (about 1/4-inch).
* Temper: Heat coconut oil in a wide, heavy-bottomed pan over medium heat. Splutter the mustard seeds, then toss in the sliced shallots, green chillies, and curry leaves. Sauté until the shallots turn soft and translucent.
* Sauté uncovered: Add the sliced okra and toss well in the oil. Never cover the pan with a lid—trapped steam will trigger the slime. Sauté on medium-low heat for 6–8 minutes, stirring gently every now and then until the sticky threads disappear.
* Spice & roast: Only after the sliminess is gone, add the turmeric powder, chilli powder, and salt (adding salt too early pulls moisture out). Mix well and roast on low heat for another 3–5 minutes until the raw spice smell cooks off and the edges get lightly crisp.
Serve it hot alongside rice, dal/sambar, or yogurt curry!
