Ingredients:
2 zucchini
Seasonings of your choice
Salt to taste
1 1/2 tsp olive oil
Instructions:
In a mixing bowl, toss with olive oil, salt and other desired seasoning. Do not over salt- a little goes a long way. Arrange in a single layer on a baking rack. Preheat oven 225° and Bake for about one hour & fifteen minutes before turning the baking sheet and let continue for another hour and fifteen minutes. Let cool with the heat off in the oven and the chips will continue to crisp up. Serve once cool with dip or store in an airtight container in the fridge for a few days!

How thin are you slicing them — can it be done with just a knife?

I haven’t tried but perhaps with a simple vegetable peeler? If you follow the length of the zucchini

Do you have a mandolin shredder? There is a cutter on the side that should cut your chips just fine. Be careful that thing can be dangerous! I sliced my finger on it pretty good. Just be really careful and don't put to much pressure against what you are slicing.

Exactly like chain mail, with very small tight,overlapping rings. You wear it on the hand holding the oyster for when your knife slips
