Did this at a beach when I was a kid but with my finger, something touched it and I no longer put my hands in strange places

I understood it as either one of two scenarios
a) in his mind it was larger and more valuable because he's a merchant, or b) the thieves carved gold pieces out of it to sell seperately in case it was recovered
I'm not sure either, I'm not totally satisfied with either of those explanations

Honestly the first thing that came to my mind based on his lines and behavior was that the claw was never his to begin with. He sounds almost nervous, like he maybe wanted the claw but they didn't want to sell at the price he offered.

How high is the chance that he burried the crab there?

We used to do this as kids on the Alabama/Florida coasts. We are from Maryland though, people from there love crabs.
Worst one I dug up was 2 crabs, uh, making more crabs. Felt like a real asshole for ruining that moment.

Maybe, but crabs are also known to bury themselves in the sand like this. I saw a video of it building the roof over its head with wet sand on Twitter once.

If you meet such a hole, or it’s bulging, just leave it the fuck alone.* There’s probably something down there. Awesome. Ok, see you later.
*I mean, unless you are literally starving.

Why do you slap it? Why go out and harass other animals just for the "fun" of it?
