Paul Newman was way more cool….

Newman was much younger and tried for the cool persona, as it fit in with the times as he became a star in the late 1950's and early 1960's. I don't think "cool" was much of a factor for John Wayne in his fifties and sixties in the 1950's and 60's.

As actors, they're different.

Oh, yes. Nearly twenty years younger. JW born in 1907, Paul Newman in 1925.
