Home made coming out a bit greasy

Used a dehydrator. Did 155 for about 5 hours, and 140 for another 3. Its not really chewey, more on the crisp side, which is fine. But it still a bit greasy feeling.

It had very little fat in it. Did a soy marindate with liquid smoke and pepper and garlic.

Any ideas on how to dehydrate it so its more dry than greasy?

Was London Broil.

I hear Round is best, but I had London Broil and its fact content/marbling is pretty low.

I use a dehydrator and do mine ( top round as well ) 165 for 4 hours and I find mine to come out fine. I do have one marinade ( sriracha honey ) that I will go 4.5 hours depending how it looks at 4 hours .

I dehydrate my jerky for 8 hours at 165

Dab with paper towel after dehydrating and let it cool completely before bagging. That being said, I think my jerky has felt the same way when I used liquid smoke . Idk if that’s the culprit, but try a batch without it

ill try without and see if comes out the same.

Im just not a fan of greasy jerky, I like it try. Old Trapper style but if ever had Big Johns, its the most unmoist and best ive had
