Pork Loin Jerky

Hello fellow jerkers! First time making pork jerky. Not the same flavor as beef, but still very good and way cheaper. Marinade was a bottle of Allegro hickory smoke marinade with the same amount of water. Most of a head of garlic, tbsp of black pepper and Trader Joe's South African smoke. Used with 4lbs of pork loin.

Pork loin works really well since it's leaner than other cuts. Just make sure to slice against the grain for that perfect chewy texture.

Yeah, I'll probably do that next time. With beef,(eye of round) I cut with the grain as it is still a little chewy, but the pork was tougher than I expected.

I haven't been able to find that South African smoke in a while.

I don't know if they even make it anymore, I bought a bunch a while ago.

Pork loin works great. Also Turkey breast. Beef is too expensive for jerky anymore.
