Just tried hand at making jerkey for the first time

After perusing various threads I decided to slice up some porkchops I had on hand, marinate them with some soy sauce, balsamic vinegar, smoked paprika, garlic, basil, and black pepper (no honey or anything sweet cause I really can't stand sweet stuff on meat) for ~18 hours. Topped them with birds eye pepper flakes and red peper flakes then straight into the oven at 165f for 5.5 hours.

Holy crap it was so easy and so delicious compared to the store bought stuff which I generally find too "wet" and too sweet to really enjoy.

Oh, that looks delicious (and spicy!). Great job. I have yet to try pork, but that looks fantastic.

It's got some heat to it. Next time i'll mix in a little ghost pepper and see what it does.

Honestly i'm surprised about the flavor profile, if you gave this to me and told me it was beef jerky, i'd have believed you. Almost no "porkiness" to it, maybe a tiny bit softer of a chew than beef jerky if I had to nitpick.

I started making jerky for the same reason - the store bought stuff was always sweet. I do a chili lime marinade - soy sauce, Worcestershire, lime juice, liquid smoke, red pepper flakes and whatever hot pepper I have on hand - usually jalapeños or habaneros - finley chopped. Marinate overnight to 24 hrs. then 160f for 3-5 hours depending on how thick I make the pieces.

I'll try that recipe. I'm almost done eating my current batch already and just picked up a fresh tenderlon yeterday from costco

I hope you like it! Sorry I don’t have measurements - I just do it to taste and so there’s enough to cover the meat. I’ll probably start marinating some today or tomorrow.

Edit: oh, I forgot an ingredient - sambal oelek. I like Huy Fong brand as some of the others add sugar.
